Semolina Pistachio Pudding

























Ingredients: 
1.    Semolina Pista Basboosa (cake mix crushed 1 cup) 
2.    1/2 Cup Butter  
3.    1/2 wiped cream
4.    1/2 cup  Cream Cheese
5.    1/2 Cup Milkmaid 
6.    1 1/2 Tbsp Gelatin mixed with hot water
7.    1/2 Cup Sugar
8.    1Cup Water
9.     Edible green Color
10.  Some chopped Pistachios

Preparation: 

Make a crust with butter and basboosa mix and set a layer at first. For the second layer mix the ingredients from 3 to 6 and beat using a hand beater. Add some green color and 1 Tbsp. gelatin mix to it. Pour this mixture above the crust. Freeze it for about 10 to 15 minute. 
For the third layer boil ingredients from 8 to 9 and add the remaining gelatin mix to it with some green color.  Remove the frozen pudding; pour the clear gelatin mix over it. Decorate with pistachio and serve cold later.

Stuffed Rice Baby Marrow



Ingredients:

  1. 1 Cup Sticky white Rice soaked for 10 minutes
  2. 1 Cup Chopped Onion
  3. 2 Cup Chopped Tomato
  4. 1 tsp Pepper Powder
  5. 1 tsp cumin powder
  6. 1 tsp cinnamon powder
  7. 2 Cup Tomato puree
  8. 2 Cup Vegetable or chicken stalk
  9. 1 Tbsp lemon juice
  10. 1 tsp chilly powder
  11. Parsley chopped
  12. Coriander chopped
  13. Baby Marrow 
  14. Vegetable or chicken stalk
  15. garlic cloves
  16. salt to taste

Preparation 

Mix the rice with some chopped onion, tomato, parsley and coriander added with powder ingredients. Stuff the baby marrow with the rice. Fry oil add chopped onion, garlic cloves, tomatoes, tomato puree cook until raw taste of tomato puree vanish. Add remaining dry ingredients to the dish with the stalk and baby marrow filling. Baby marrow should be covered completely with stalk. Cover and cook for 30-40 minutes under low flame. Add some water if it gets reduced. Garnish it with some parsley and coriander leaves.

Spinach(Pacha Cheera Thoran)














Ingredients


Chopped Spinach
1 tsp Chilly flakes 
1/2 cup chopped Shallots
2 to 3 garlic cloves
Curry Leaves
Coconut oil 
1/2 Cup grated coconut
1 green chilly
1 tsp Turmeric Powder
1 tsp mustard seeds
salt to taste

Preparation 

Fry oil pop the mustard seeds then add curry leaves, garlic, chopped shallots, chilly flakes, green chilly. When onion gets light brown add grated coconut and turmeric saute a little, later add spinach and salt to taste. Cover with lid and cook.

Butter Chicken















Ingredients
  • 1/2 KG Chicken boneless cubes
  • 1Cup Chopped onion 
  • 1Cup Tomato chopped
  • 2 Tbsp Methi Leaves
  • 2 tsp Turmeric
  • 2 tsp Chilly powder
  • 1Tbsp yogurt
  • 2 tsp Cumin Powder
  • salt to taste 
  • Butter and oil as per needed
  • Green Chilly 
  • 1 tsp garlic paste  
  • 2 Tbsp Cashew paste 
  • Fresh cream
Preparation 

Marinate chicken cubes with chilly powder, cumin powder, yogurt, salt, butter and keep aside for an hour. Lightly fry the chicken pieces to tender
For Gravy
Saute butter add onion, tomato, garlic paste cook until light brown, now add cumin, methi leaves, remaining chilly powder and coriander. Grind the above into paste. On the other side fry green chilly and some chopped onion in a butter now add the grind paste,  and add the fried chicken pieces aling with cashew paste. Cook the gravy for about 10 min.
For garnish add coriander , fresh cream 


Avocado Salad












Ingredients
 (For a 18inch bowl of salad) 


Avocado 
Onion 
Capsicum 
Cucumber
Lettuce  
Carrot 
Red radish
Cherry tomatoes

 For Dressing 
 2 Tbsp Olive oil 
 1 Tbsp vinegar / lemon juice
 1 tsp honey 
 1 tsp Sumac powder
 Toasted sesame seeds
 Salt to taste 

Preparation 

Mix all the above salad ingredients add the dressing accordingly while serving

Bulgar Wheat Tortilla Pulav


















Ingredients

2 Cup Bulgar Wheat
3 Chicken Stalk Water ( can be made by Maggi chicken stalk or Veg stalk)
1 Tbsp chopped garlic
1 tsp Turmeric Powder
1 tsp Cumin Powder
1 Cup Chopped Tomatoes
1 Cup Tomato puree

1/2 Cup Chopped Onion
1/2 chopped Carrot
1/2 chopped Capsicum
2 Tbsp Tomato paste
1 Tortilla Bread cut into pieces and fried
Coriander leaves and some chopped tomatoes for garnish
2 Tbsp Oil / ghee for cooking
salt to taste

Preparation: 
Fry ghee and add chopped onion , garlic, tomatoes saute until done. Now add wheat, dry powders and saute for about 3 minutes. Add all vegetables, salt and tomato puree and  cook for few minutes. Add chicken stalk water and cover until cooked. Garnish with coriander, tortilla and tomatoes. Serve hot with grilled chicken or fish.










Chicken and Potato Grill











Ingredients

Whole Chicken with skin (Cut to 4 pieces )
2 Tbsp turmeric powder
1 tsp Pepper powder
1 tbsp Chilly paste
1 Tbsp tomato paste
1 Tbsp Lemon Juice
3 to 4 cloves garlic
2 Potatoes sliced round
1 small cinnamon stick
1 bay leaves
Oil to saute
Salt to taste
Parsley or coriander shopped

Preparation

Marinate chicken with  pepper, turmeric , chilly paste and salt keep for half an hour. Fry oil and toast the chicken on both the side. When half cooked place it to the oven dish. Toast potatoes both the side and add it with the chicken. Add all the remaining ingredients with the chicken mix it well. Cover with Aluminum foil and grill it for about 1 to 1 1/2 hour until cooked. Garnish it with some chopped parsley or coriander




Grilled Sardine






















Ingredients:
4 to 5 Sardines
1 tbsp Pepper
1 tsp Turmeric
1 tbsp Coriander Powder
1 Tbsp Vinegar
Salt to Taste
1 tbsp Coconut Oil
Preparation:
 Marinate the fish with all the ingredients and keep for 1hour. Grill the fish for 40 minutes under 180  degree Celsius

Crab Deep Fry















Ingredients :

1 kg Cleaned Crabs
2 Tbsp Red Chilly Powder
1 Tbsp Red Chilly flakes
2 tsp pepper powder
1 Tbsp coriander powder
1 Tbsp ginger /garlic paste
2 Tbsp Corn Flour
1 Tbsp vinegar
 some curry leaves and green chilly for decoration

Preparation 
Marinate all the ingredients with the crab and keep aside for 1 hour and deep fry its to crispy. later fry in the same oil curry leaves and green chilly. 



Crispy Fried Squid



Ingredients
1/2 KG Squid (Cut as Ring)
2 eggs
2 tbsp pepper
1 tsp oregano
1 tbsp vinegar
1/2 cup cornflour
1/4 cup plain flour
1 cup bread crumbs
1/2 cup crushed cornflakes
salt to taste
Oil for deep frying
Note: (mix all the dry ingredients together to make a powder)
Preparation:
Marinate squid rings with some pepper, vinegar and salt keep aside for 15 minutes. Dip this ring one by one in beaten egg and powder mix  later deep fry


Spicy Grilled Chicken



Spicy Grilled Chicken
Ingredients:
Whole Chicken with skin
1 Tablespoon Pepper
2 Tablespoon Red Chilly paste(Kashmiri chilly grind with vinegar)
1 tsp Turmeric powder
1 tbsp balsamic Vinegar
1 tbsp Soybean sauce
salt to taste
oil for spraying
Preparation:
  1. Mix All the above ingredients with Chicken and keep it for 2 hours for marination
  2. Grilled the Chicken for about 1 1/2 hours 200 degree Celsius
